I found a version of this recipe on a zillion different sites the other night when I was craving something sweet, so I customized it to fit the ingredients I had on hand and the result is these simple, sweet, chewy, melt in youth mouth morsels of cookie heaven.
Mix together 1 cup of your favorite nut butter, 1 egg, and a pinch of baking soda. Bake at 350 for 12-15 minutes on parchment paper, and BOOM! Cookie, heaven.
For this delicious batch I upped the ante by using our JEM Raw Cashew Cardamom Butter (one of my favorite products on this planet – no stretch here.) and broke a Endorfin Mylk Chocolate bar into chips and mixed in before baking. If you're not using a sweetened nut butter, you'll probably want to add in a little honey or coconut sugar as well.
