PaleOMG really creates some amazing recipes. One of my favorites, and often made in my house is her spaghetti squash pizza pie. It’s simple, and absolutely amazing.
With a plethora of leftovers, I whipped up a Tex Mex version of this delicious dish and it was a HIT!
Preheat oven to 400.
Mix two cups of cooked spaghetti squash, cooked ground beef (I used about a cup and a half), and a can of diced tomato and chiles. Sprinkle with cumin, chili powder, paprika, salt, garlic, onion powder, and a fat pinch of Teeny Tiny Adobo. Mix well.
Grease a bread pan or casserole dish and pour mixture in. Whisk 2 eggs together and pour over mix. With your hands, work egg into the entire mixture and bake for about 45 minutes. I broiled at 500 for a few minutes to make the top a little crispy.
Top with guacamole and dig in!
