Love chocolate? Love goji berries? This smooth, slightly sweet cookie gets a nice crunch from some cacao nibs, and a little hint of berry tartness.
If you’ve tried Sunfoods goji berries, you know they are leaps and bounds different from the ones you find in bulk bins, or made by other brands. They’re juicy and plump- unlike the hard bitter ones you may have had before. I highly encourage you to try them for yourself! Im obsessed with them and have been sneaking them into everything I make lately.

Cacao Goji Berry Cookies
You will need:
Mix all ingredients together well, except goji and cacao nibs. Add those in after your mix is, well, mixed!
Scoop out into 1 tbsp balls and place on a greased baking sheet, silpat, or parchment paper. Flatten by hand to the same thickness. I topped half of mine with some coconut flakes.
Bake at 350 for 12 minutes or until done. If any gojis burn around the edges, you can pull those out before serving.
