Curry Deviled Eggs - Cookout Side Favorite

No cookout meal is complete without some tasty deviled eggs. If you have been missing out on the wonder that is a deviled egg since going paleo, wait no longer.

Melissa over at The Clothes Make the Girl makes the BEST homemade paleo mayo- start with a batch of this. OR you can try out Primal Kitchen PALEO Mayo, made with avocado oil! (< this stuff is life changing!) 

Once you’ve done that. Bake your eggs, yes bake, at 325 for about 30 minutes. Watch how its done here. You can boil if you’d rather, but this is just so easy!

When you’re done there, separate the eggs (cut in half and put all the yolks in one bowl.) Mush the yolk. I made half curry and half regular eggs, so I split the yolks into two bowls.

For the regular flavor, I took 2 tbsp mayo, 2 tsp mustard and mixed well. Spoon into eggs and top with paprika.

For the curried version, I took 2 tbsp mayo, sprinkle of Real Salt, and 1.5 tsp of Teeny Tiny Vindaloo Spice Mix  well, spoon into egg and top with paprika and a sprinkle of cumin.
