Zucchini Avocado Roll Ups

These little rolls are a great side for any grilled meat. PLUS you can make them without even leaving the grill! Here’s how it’s done. 

Wash then slice off the ends of a zucchini squash. I used a mandolin slicer but you can slice by hand if you’d like, to make long strips. Sprinkle with a little Real Salt, garlic powder, pepper, or any seasoning of your choice. Rub with a little olive or coconut oil. 

Chop some cilantro. Slice an avocado. Ladle out some organic salsa into a small bowl, and grab a few spoonfuls of your favorite nut mix (I recommend the Spicy Cocktail Blend, Go Raw Spicy Seed Mix, or Cilantro Lime Mojo Pistachios and Pepitas) and head to the grill.

Lay strips across a hot grill and close. Cook for about 4-5 minutes on med-high (checking after a few minutes) and flip when grill marks start to show.

Cook the other side for the same amount of time after flipping, then carefully remove from grill.

Place a slice of avocado in the middle of your strip, spoon a tbsp of salsa on top, sprinkle cilantro, and nuts, then roll.

The moisture of the zucchini helps sea; these closed a bit.

Finish cooking your meat, grab a cold glass of iced tea, and enjoy!
