Paleo Chocolate Turtles

No, not the animals. The chocolate caramel pecan goodies you get in the big fancy candy assortments.

I was craving a little sweet treat when I came up with these, using under 7 ingredients, all that I had on hand.

These took about 5 minutes, an hour to set, and 0.5 seconds to devour. 

You will need:

First space your nuts evenly on a silpat mat or parchment paper (a greased pan would be fine as well)

Now heat the butter and sugar together on high heat, mixing well.

Bring to a slight bubbly boil, then remove from heat.

Spoon a dollop of the toffee onto your pecans. 

Next heat the coconut oil until melted, then add in your cacao powder, sweetener, and mix well. 

Spoon/drizzle the chocolate onto your pecans, covering the toffee.

It’s okay if they look really messy at this point. That extra chocolate will snap off after cooling.

Place in the fridge for about half an hour to firm. You can see below that the chocolate becomes more matte in texture when cooled. At this point when you remove them from the sheet, you can break off the extra chocolate that spilled off the pecan.
