Chia Berry Jam

Earlier I posted a great recipe for a nut free bread that I made from The Paleo Mom’s fantastic collection. I use it with soups, stews, etc but wanted an old favorite: toast and jam. You could also use the 2 ingredient bread recipe, which takes about 15 minutes from start to finish. (find it here)

I whipped this up in about 10  minutes, and put it in the fridge for a few hours to set. This stuff is a great sub for the sugar filled kinds you will find in your local grocery store and you can use whatever kind of fruit you want! I can’t wait to try other combinations.

Chia Berry Jam

You will need:

  • 1/4 cup blueberries
  • 1/4 cup blackberries
  • 1/4 cup raspberries
  • 1 tbsp honey
  • 2 tbsp chia seeds
  • 3 tbsp water (more or less depending on texture desired)

First, take all your berries and blend in a food processor. I added a tbsp of water to make it a little thinner. Next, add 2 tbsp of chia seeds to a jar or large cup and set aside.

Scrape scrape berries into a small pan on medium heat. Add a tbsp of honey and mix well. Turn heat up until mix begins to simmer. Leave simmering for about 30 seconds, stirring well. Carefully add the warm berry/honey mixture to your chia jar and mix well. I added about 3 tbsp water so that chia would have more room to expand, thus making more jam.

Put in the fridge and allow the chia to expand and cool.

Spread on your favorite bread, top a bowl of cereal, or add to a fruit bowl and enjoy!
