Why do I love coconut? Well other than the fact that it instantly takes me away to a tropical paradise, it’s fatty acids can have profound positive effects on health — everything from fat loss and heart health, to better brain function and cholesterol. It’s full of health-boosting lauric acid and medium-chain triglycerides, has antimicrobial and anti-viral qualities, and has been shown to help with weight loss, Alzheimer’s, cognitive function and athletic performance. It nourishes the thyroid, helps prevent candida overgrowth, boosts the metabolism, and makes skin and hair softer. Many people eat several tablespoons of coconut oil daily, for the incredible host of benefits it confers.
So on to the tasty stuff…
For this smoothie, I grabbed all the coconut things I had on hand and the outcome was delicious.
First, coat some Danielle Roasted coconut chips with a little maple syrup, or a simple syrup of coconut sugar and water, then sprinkle with a little Real Salt. Bake on a low temperature until crisp again and let cool. This will be your delicious topping/mix in.
You will need:
1 cup coconut milk (canned, carton, homemade, your pick!)
1 cup of ice cubes
1 tbsp coconut sugar
1 tbsp coconut manna
1- 2 tsp freeze dried coconut water flakes (you can sub shredded coconut if you’d like!)
Optional- drizzle of coconut oil for a smooth rich texture
Combine all ingredients and mix. Top with toasted chips, pull out your beach chair, and find your happy place.
