Paleo Blueberry Mango Lucuma Smoothie

It’s always been hard for me to get enough of my daily greens. I love veggies, but somehow always leave our my poor greens. This combo is a nice way to get a few handfuls of spinach in your daily diet in a tasty way.

If you’re looking to cut sugar, you could omit the mango and use a chia seed gel base, or coconut milk for a less thick version, and just a little of the mango for flavor. 

Why mango? It’s delicious, but it is also said to help prevent cancer, improve eyesight, as well as a number of other health benefits.

Why blueberry? Low glycemic, great flavor, and antioxidents!

Why lucuma powder? Lucuma powder comes from a tree fruit- it’s not only delicious but it is a nutrient rich source of fiber, vitamins, and minerals including zine, iron, calcium, carotene, vitamin B3 and other B vitamins. It also adds a little sweetness without being too sugary. 

Why spinach? We all know greens are great. Full of nutrients and antioxidants. 

You will need:

  • 1 sliced mango 
  • 1/2 cup-1 cup of almond or coconut milk
  • 3/4 cup of blueberries
  • 1 tsp honey (if extra sweetness is desired) 
  • 1 tbsp lucuma powder
  • handful of spinach
  • 3-4 ice cubes

This one is pretty straightforward- blend and enjoy!
