I try really hard to keep my food wholesome, of course there are desserts in there, but I try to stay away from just making paleo versions of my favorite old junk foods. Well sometimes I just crave an old junky favorite- I REALLY wanted some mini corn dogs this week. I know, weird, and no, there is no pregnancy craving happening here. Just an odd junk food desire. This one was an easy swap and completely satisfied that craving, thank goodness, without driving me to the local fairground and submitting myself to the hoards of deep fried foodstuffs.
Here's how to make them:
I started by preparing 2 uncured, antibiotic free, natural hot dogs. (Applegate makes some good ones!)
Next go ahead and preheat your oven to 350.
In a medium sized bowl, mix 3 eggs with 2 tbsp coconut flour, and 2 tbsp of a grainier flour, like our sprouted super flour. I haven’t tried this with almond but I think it would yield the same results, however the super flour was perfect.
Throw in a dash of salt and dried garlic powder and mix well, ridding the batter of any clumps.
Oil down 8 mini muffin cups and add about a teaspoon (just enough to cover)to the bottom of the cup. Cut hotdog into pieces that will fit into the cups. Spoon a spoonful of batter on top of each dog. To help flatten and even out the cups, pick the pan up about an inch off the counter and drop it, several times.
Bake for 15-20 minutes or until golden brown, grab your favorite dip, and indulge! I had some plain mustard with mine.
