A yummy, slightly tangy, twist on an old favorite- bacon brussels. For this pan of soul warming goodness, you will need:
1 lb brussles sprouts, chopped (in fourths)
1/2 cup of raw cranberries, use 1/4 cup dried for less tangy end result
3 slices bacon
1 tbsp Nutiva Coconut Oil
1 tsp minced garlic
1 tsp Real Salt
dash of pepper
Optional spice: Perfection Spice by Teeny Tiny Spice Company (for a little sweet savory heat!)
Preheat oven to 350. Chop bacon and fry for about 2 minutes in a pan, stovetop, on medium high.
Coat the cranberries and brussles in 1 tbsp coconut oil (combine in a large bowl) then sprinkle in salt, garlic, pepper, spice.
Transfer brussel mix to a baking dish and pour bacon over the mixture.
Bake 15 minutes at 350, then turn the heat up to 450 for the next 15, stirring and flipping halfway through the second 15. Finally, cover for 15 more at 350 to finish.
To add another dimension of flavor, drizzle with some good balsamic vinegar or sprinkle with coconut sugar to cut down on some of the tartness of the cranberries.
