One of my favorite veggies, hands down, is the carrot. I love them in all shapes and forms. Roasted, baked, pureed, fried, raw- you name it. I have actually been known to have an orange tint to my skin (especially the insides of my hands, and bottoms of my feet- for real, it's called carotenosis, check it out!)
Regardless, I eat them. A lot. And one of my favorite ways to eat them is to make carrot fries. They're ridiculous simple, and really delicious- you can add your favorite spice, or cook with a variety of oils, to enhance the flavor of these.
First, preheat your oven to 400 degrees.
Carefully, cut a carrot lengthwise, right down the center. Take those halves, and cut them again, lengthwise- depending on how thick your carrots are (aim for the thick ones, so you can get four "fries" from each. Now, if your carrots are long, you can cut them in half first so you'll have even more fries.
Next, melt some coconut oil in a skillet, then toss the carrots in a large bowl with the melted coconut oil. You can use avocado oil, walnut oil, or sesame oil if you like- they will add some extra flavor to these. Now sprinkle with some Real Salt, your favorite Teeny Tiny Spice, and bake for 15-20 minutes on each side, flipping halfway through, until "doneness" desired. I like mine a little crispy.
