Paleo Scallion Pancakes

You will need: 

2 eggs

1/4 cup Otto's Cassava Flour

1 tsp ghee

2 tbsp scallions

Blend, and pour batter into a well greased pan over medium heat. If batter is too thick, add a little water to thin. Cook on side 1 until firm and top has set, then flip and cook on side 2 until browned and slightly crisp. 

Top with avocado, or dip in your favorite sauce (this one looks awesome!)

You'll find that mixing Otto's with an egg, a little water, can be a great way to make a quick flatbread, pancake, or wrap, depending on what other ingredients you add to the mix.
