My Go-To Whole30 Chicken Salad

Chicken Salad is my LIFESAVER during a Whole30. It is so easy to scoop onto a ton of greens for an easy lunch thats full of protein and good fats. I love using Primal Kitchen's Mayo, because it's made with avocado oil, rather than canola oil, which makes it so much better for you to eat — and of course paleo and Whole30 compliant.

My chicken salad is SUPER simple but I figured I'd share in case you were looking for an easy lunch:

about 2-3 lbs of shredded chicken (you can use a rotisiree, or just very small diced chicken breasts)

5-6 stalks of celery, chopped finely

4 small, or 2 large pickles (find a compliant brand! Trader Joe's has some, just be sure to look for additives in pickles!) diced

2-4 tbsp Primal Kitchen Mayo

pinch of salt

dash of pepper

Optional: small handful of raisins 

Chop and dice chicken, celery, and pickles. Combine in a large bowl. Add a tablespoon at a time while mixing until salad holds together somewhat, sprinkle with salt and pepper, then toss a few raisins (make sure to get no sugar added) on top before serving.
