Almond ice cube mania! Faced with way too many almonds, I did what any sane obsessive person would do. Soaked them with salt overnight in a huuuge bowl, blended (in vitamix) w/ a 1:1.5 almond/water ratio for ultra-creaminess (had to do 5 batches!), poured slurry into nut milk bag, milked bag like cow, froze in trays and put cubes of creamy goodness into freezer containers for much smoothie deliciousness to come. 5-7 of these cubes add a rich creamy milkshakey dimension to any smoothie, plus omega 3s, calcium, magnesium, selenium, manganese and vitamin E!
