Cram a potato in your mouth: try a TigerNut! Yes: though it sounds strange, these little dried snacks are actually tubers, just like our most beloved vegetable, the spud. Call these peeled dried tigernuts a gateway to your future love of all things tigernut. From whole pieces to flour to nut milk, these snackable little orbs are both slightly strange and wonderful all at once. Just one, slightly sweet, gnawed on thoughtfully, will make you smile. First they taste a little sweet, then a little fibrous, then a little sweet again. It has begun, your love affair with these tiny tubers from Paleo history.
A lot of things in the world had to happen for me to be holding this bag with shriveled little tan pea-sized tubers. Obviously, the plant had to be grown, harvested, and eventually put into this handy sack. But there's more than that, because it wasn't long ago that this plant wasn't even known by anyone in the modern world. Basically, the Tigernut (also known as Chufa) had a long history unrelated to health aficionados like us (read more about horchata, below). But it had to be "rediscovered" by a population hungry for healthy traditional foods.
What you're holding is an awesome outcome, because these chewy/crunchy little spheres are all kinds of tasty. Compared to unpeeled tigernuts, these are sweetly gentle to the tongue and easy to fall in love with. Think of peeled versus unpeeled tigernuts as the difference between peeled and unpeeled cucumber: both tasty, but the latter with a tad more work and a more challenging flavor. Such with tigernuts: both are great for you but appeal to slightly different palates.
Now, there's one caveat: they're very high in resistant starch which is the thing your gut bacteria loves to eat to make even better gut bacteria and nutrients for you. Eating the whole bag, while tasty, is not recommended, at least not until you're a resistant starch ninja. Think of the first time you downed a bunch of kefir before your body had adjusted. I'll leave that thought as is.
I had actually heard the word "tigernut" long before I got into the Paleo thing. Why? Because I got into the foodie thing first. Foodies love to go to hole-in-the-wall Mexican joints and order the strangest thing on the menu, which in the early 2000s wasn't tongue tacos but rather an exotic-sounding drink called Horchata. Turns out that horchata is likely the very first "nut milk", predating all of the stuff we now know like almond milk, soy milk, hemp milk, and all the rest. It was enjoyed in the Middle East and then migrated to Spain, where it is still a common summer beverage, like our Southern sweet tea. Unlike sweet tea, tigernuts have ridiculous nutrition specs, and that is no exaggeration. Basically, beef liver is the only thing that tops them overall. Yow.
