Parsnips are one of those undersung veggies that you probably don’t spend a lot of time thinking about. They look like hairy albino carrots, except you can’t crunch on them raw like carrots. They’re the sort of veggie you might walk right past in the produce aisle or at the farmers market, looking for the familiar, uncertain about exactly what to do with these strange white rooty things. Maybe once you bought some parsnips, thinking you’d use them in a stew or something, but chances are, they sat deep down in your produce drawer for months, growing limper and sadder as the weeks went by.

We at Barefoot Provisions believe that the humble parsnip is about to have its day again. You may laugh, but lest you forget, kale used to be just as obscure as parsnips until its recent meteoric rise to fame and fortune, no doubt spurred on by the kale chip revolution.
The fact is, parsnips are delicious, and packed with nutritional goodness. And when they’re made into chips as good as Snip Chips, there’s really no excuse to not be eating them. I absolutely love kale chips, but I’ve found a new lust in Snip Chips. The earthy sweet flavor of the parsnips combines brilliantly with coconut flakes and other phenomenal superfood ingredients and umami-rich seasonings to create a snack that tastes every bit as good as Kettle Chips in their heyday, but without any of the guilt. In fact, if you’re eating something this healthy as a snack, not only should you not feel guilty, but you should be feeling pretty smug. These things are nutritionally impeccable — they’re basically like eating an exquisite veggie dish, except they’re crispy and full of flavor and taste like potato chips, but much more interesting. I could easily see these as an appetizer or small plate at a hipster gastropub — they’re addictively good, and the flavor combinations are innovative, bold, and just plain fabulous.
The Cheezy Herb Truffle flavor is incredible. It’s doing the “vegan cheese” thing that many kale chips do so well — a tangy sweet umami combination of red bell peppers, lemon, spices, and nutritional yeast (‘nooch’ if you’re cool) all melds perfectly into a savory cheesy coating that makes the chips completely addictive. And then an additional layer of truffle oil adds a fragrant musky earthiness to the whole thing, merging perfectly with the earthiness of the parsnips, but catapulting things into a whole new sensory realm.

Sequoia always had a passion for good food, that wasn’t always good for her. When life threw her a curve ball and she was diagnosed with type 2 diabetes, she knew something had to change if she wanted to heal herself. That began the road to good health.
