Everyone loves a blueberry muffin, right? Push all the right taste buttons with this perfect post-workout bar, a complement to bridge the gap until your next real meal: a chewy blueberry bar, toothsome and nutty with just a hint of sweet. If your primally-oriented coach had a prescription pad, they would write down "RxBars" to enhance your recovery each day. Blueberry is RxBar's dessert-worthy mouthful with ample protein and simple ingredients as foundation. These wonderful fruit-studded bars, made delicious with blueberries and figs and hearty with egg white and almonds, are compliant with even the most structured meal plans out in paleo land. Hooray!
I'm a complete push-over for a good, chewy cookie—toothsome is good, chomp-worthy even better, no crispness required. That might be why I fell into love with (eek!) bodybuilding protein bars many years ago—those chewy, sweet, chemically enhanced bricks sometimes referred to as "meal replacement" options. They were satisfying for a few moments . . . until you started to realize how un-like food they really were. There are better options for post-workout (or work) nutrition these days for those of us trying to eat in a primal direction. But if you're not really into tins of sardines or pre-cooked omelets in plasticware, having a bar option that's not too sweet and has the staying power of extra protein is a wonderful find.
RxBar started making bars for those of us ready to "graduate" from the tried-and-true date/nut bars. Those date bars are still delicious, make no mistake, but they can be very sweet and never did have much in the way of protein. As for the rest of the field, other "healthy" protein bars love to add things like rice or hemp or soy protein or "natural" sweeteners just to bind everything together, ingredients that might not be aligned with our nutritional goals. RxBar meets everyone half-way perfectly: start with dried fruit and nuts, add a few spices, add some egg white protein, and . . . that's it.
When it comes to fruit, this Blueberry bar is a huge hit with everyone who loved those sweet "blueberries & cream" oatmeal packets doled out lovingly each school morning (hello, Gen-X'ers!). Or, those of us who used to indulge in bakery muffins now and then. Or, anyone who likes those fig newton bars (any flavor!), right down to the itty bitty seeds and sweet filling. The occasional crunch from a fig seed or a piece of almond adds some awesome texture, but my favorite part is just the pure chewiness. This is a satisfying bar, from first to last bite. It won't leave your teeth aching nor your jaw unexercised (that's a good thing!).
RxBar was conceived by two friends who wanted a better protein bar option. Here's what they say about why it all began, "RxBar was the first real food fruit and nut protein bar on the scene. Friends since grade school Peter and Jared were inspired by the lack of a REAL FOOD protein bar. All of their favorite snack bars either lacked protein or were chock full of artificial preservatives and ingredients. They headed into the kitchen, got cooking, and RxBar was born."
Peter and Jared promise that their bars will never contain these ingredients: Dairy, Soy, Gluten, Added sugars, Artificial sweeteners, Whey, Artificial ingredients, Sugar alcohols, GMOs, or Preservatives. Need they say more?
Dates, blueberries, and figs are the main source of sweetness in these bars, and a natural preservative and source of awesome chewiness. Dates are vitamin and mineral-rich — they’re particularly high in iron and vitamin K. Blueberries provide the key flavor component for this bar, as well as some natural fiber and potent antioxidants. Figs are just awesome regardless, not to mention a great source of copper.
Egg whites are one of the best sources of protein. Unlike more conventional sources, egg white protein is immediately absorbed into the body due to the naturally high biological availability. In addition to the high-quality protein content, egg whites are jam-packed with minerals and amino acids essential to keeping your body healthy.
Almonds are naturally delicious and extremely nourishing. Healthy fats, fiber, antioxidants, calcium, zinc, selenium, copper, magnesium, manganese, tryptophan and vitamin E are just a handful of the key nutrients that make almonds so nutritious. Almonds are so nutritious — their list of benefits reads like a patent medicine bottle. They’re full of health-giving fats, like oleic acid and linoleic acid, powerful antioxidants that can protect against many forms of cancer (oleic acid can protect women against breast cancer specifically), and can also significantly lower the amount of LDL in your blood, and reduce your risk for heart disease. A wonderful natural sweetness and impressive variety of nutrients makes almonds one of nature’s most perfect foods.
It's a bar. Unwrap, bite, chew, enjoy!
