For the true, true stories behind this incredible foodstuff, read on.

Cookies: we love them. With sweetness, heft, chewiness, and fat, how could we not? Cookies, however, are often consumed right from the shelf-stable packaging tray that cradles refined sugars, nutrient-poor flours, and hydrogenated vegetable oils. This is not a recipe for health, though it can be a recipe for profits, product longevity, and habitual snacking leading to weight gain and declining health. Eesh!

Enter WB Kitchen and these adorable twin-packs of tasty. The "WB" stands for White Buffalo, a rare and precious animal in nature. White Buffalo creates foods that are precious to the paleo crowd but less rare by the day - especially now that you can order them right here!

When WB Kitchen decided to make cookies, they started in the right place - from a paleo mindset.

All of WB Kitchen's cookie varieties start with nut flour and honey, then add key flavors to create each delicious variation - from cocoa for the brownies, to maple and pecans for the "sandies", to coconut for the vanilla shortbread. Organic ingredients are used predominantly, ensuring that nutrition standards are high and sustainability is supported.

Why are Honey Cookies so good for you?

Ok, they're not in-and-of-themselves a health food, but when you're ready to step away from the store-brand sandwich cremes, WB Kitchen's Honey Cookies are a wonderful stepping stone toward less-processed foods. They are a satisfying treat for anyone.

Made with high-quality ingredients, masterfully sourced, totally gluten-free, these are nutritionally impeccable. Here’s what’s going on inside:

Raw Honey

Raw Unfiltered Honey keeps all of the best parts of this delicious sweetener intact, from the heat-sensitive enzymes to the rich floral aroma and clean taste. WB Kitchen sources only bee-friendly honey from Colorado to use in all of their honey sweets products. Have your cookie and feel good about the future of bees, to boot!

Almond Flour

Almonds are naturally delicious and extremely nourishing. Healthy fats, fiber, antioxidants, calcium, zinc, selenium, copper, magnesium, manganese, tryptophan and vitamin E are just a handful of the key nutrients that make almonds so nutritious. Almonds are so nutritious — their list of benefits reads like a patent medicine bottle. They’re full of health-giving fats, like oleic acid and linoleic acid, powerful antioxidants that can protect against many forms of cancer (oleic acid can protect women against breast cancer specifically), and can also significantly lower the amount of LDL in your blood, and reduce your risk for heart disease. Almonds can effectively improve your complexion, slow down your aging process, help improve your blood profile by reducing your LDL, build a strong immune system, prevent the onset of high blood pressure and protect you from other diseases like ADHD, asthma and osteoporosis. They can also help speed up your metabolism, and work well in weight control. A wonderful natural sweetness and impressive variety of nutrients makes almonds one of nature’s most perfect foods.

Unsweetened Cocoa Powder & Cacao Nibs

Cacao beans: chock-full of health-giving and beautifying fatty acids and minerals, as well as antioxidants, and nutrients that support mood and the immune system. Cacao is one of the most powerful known superfoods, and had been used for thousands of years to boost health and energy levels. Raw cacao is one of the most phytochemically complex foods on Earth. Many of its constituents have yet to even be discovered! We could write a dissertation on the health benefits of raw cacao, but here are just a few compounds found in raw cacao beans,: neurotransmitter anandamide (the "bliss" chemical), neurotransmitter phenethylamine (also known as PEA, the "love molecule"), neurotransmitter serotonin (a brain chemical that acts to shield against stress, increasing ones sense of wellbeing) neurotransmitter dopamine (increases ones sense of pleasure and elevates the mood), phytochemical coumarin (suppresses appetite, and also has anti-tumor properties and helps with blood circulation) enzyme asparaginase (a special enzyme with anti-cancer properties) ergosterol (a necessary chemical for Vitamin D assimilation), sitosterol (helps maintain healthy cholesterol levels), and magnesium (helps combat osteoporosis and weak bones/teeth, heart disease, migraines, muscle spasms, painful menstrual periods, and even diabetes.)

Walnuts

Walnuts are a low-carb, high-antioxidant food, loaded with nourishing protein, fiber, and ultra-high levels of healthy omega-3 essential fatty acids to fuel your brain and heart. Shaped like a mini-brain, people have been eating walnuts for thousands of years as a “brain food” super-nut.
