I'm a complete push-over for a good, chewy cookie—toothsome is good, chomp-worthy even better, no crispness required. It wasn't until college that I started getting into coffee, but chocolate? Always! Mocha lattes were what we drank when we "needed" to keep going through another study session. So where does the cookie story meet the latte story? In THIS bar, this amazing chewy thing that I never knew I needed until RxBar came along and showed me the error of my craving ways. Now I can have my coffee and chew it, too. Yum.

RxBar started making bars for those of us ready to "graduate" from the tried-and-true date/nut bars. Those date bars are still delicious, make no mistake, but they can be very sweet and never did have much in the way of protein. As for the rest of the field, other "healthy" protein bars love to add things like rice or hemp or soy protein or "natural" sweeteners just to bind everything together, ingredients that might not be aligned with our nutritional goals.     "Our product has all the characteristics required to be Kosher certified but RxBar has not paid for the certification yet. We will during our next batch and then we can say "Yes!" without qualifying our answer!"
