Apple Protein Pancakes
1/2 c. coconut milk
1 c. applesauce
1 tsp. vanilla extract
3 Tbsp. softened butter, ghee, or coconut oil
2 tsp. apple cider vinegar
6 Tbsp. coconut flour
1/2 tsp. sea salt

1 tsp. ground cinnamon
pinch ground nutmeg
1 tsp. baking powder
1/2 tsp. baking soda
Directions: In a blender, combine eggs, applesauce, coconut milk, butter, vinegar, vanilla and salt and blend on high until well combined. Then add the rest of the ingredients and blend on low to medium until smooth and thick.
Grease up a hot skillet, and make some pancakes! Top with whatever suits your fancy. Butter is pretty awesome.
