I love cookies. I’ve always loved cookies, and I’ll probably always love cookies. And the more we try to resist the cookies, the more they rear their crunchy chewy buttery heads, beckoning to us from bakery shelves, appearing on massive platters, showing up at gatherings of all sorts. It’s hard to avoid cookies, and it’s hard to eat just one.
So what are we supposed to do about the cookie thing? A lot of people are working on this dire problem. And a lot of them have veered off in a not-entirely-positive direction. In the interest of making cookies that are “healthy,” they end up making cookies that are kind of gross. Sure, they’re okay if you squint and don’t think too hard about what you’re eating. All of her flavors are so pure and perfectly layered that it’s impossible to say which is my favorite. The Brownie flavor adds rich cacao to the mix, and transforms a gentle vanilla macaroon into a deep dark moist brownie-like morsel. There’s a cookie I used to eat from City Bakery in NYC called a Melted Chocolate Cookie, which starts out dry and crumbly on the outside, and then gives way to a heart of pure moist rich melty chocolate goodness. These Brownie Coco-Roons bring me back to this perfect cookie, but they bring in their own dimension of wonderfulness, through abundant application of coconut to the mix. The flavor is perfectly balanced — intensely chocolatey, but allowing the other notes to come through and harmonize into a vanilla-salt-maple-coconut-chocolate symphony.

Sequoia always had a passion for good food, that wasn’t always good for her. When life threw her a curve ball and she was diagnosed with type 2 diabetes, she knew something had to change if she wanted to heal herself. That began the road to good health.
