Organic Raw Watermelon Seed Butter by Dastony

No one thinks about watermelon seeds. At least, not since that spitting contest in grade school summer camp, anyway. And certainly not in the last decade or so since the whole "seedless" watermelon has taken over the stores, with their anemic little white specks. It's time to once again ponder those old-school black ovals and to appreciate them for what they really are: powerhouses of nutrition. Remove that hard outer layer and gently stone-grind the seed within, pack it in little jars, and you can taste the most innovative butter out there: Watermelon Seed Butter from Dastony. Natural nut butters? Those from the 80s and 90s were plagued with an inch of oil at the top that never seemed to go away, no matter how much I stirred. And then there was the advent of "no-stir" nut butters which ALSO seemed to have that oil slick at the top, but perhaps it was just a tad thinner. Strange, no? Getting a truly smooth nut butter seemed like a pipe dream promulgated by the likes of Skippy and Jif and so on with all of their strange ingredients and dessert-sweet tastes.

I was as curious to try this butter as I bet you are right now. It's pale, creamy, and smells like.... well, there isn't much of a smell other than a little bit of nutty backbeat. But that flavor, whoa. Without sweetener or even any salt, you get nothing but the pure essence of the seeds. It took a few bites to figure out the flavor profile and what it reminded me of. I don't want to go the "tastes like chicken" route that so many alternative meats like to fall back upon, but because watermelon butter is so new, it is handy to have a reference point. There are hints of pepper that reminds me of sesame seed butter (aka tahini), and mildness that is not unlike raw cashew butter. Beyond that... it is a new thing and quite delicious, indeed.

Just 100 grams (or 3.5 oz) of watermelon seeds offers the body 139% of the RDA for this critical mineral. If you’ve ever made nut milk from scratch, you know how time-consuming it can be. Plus, there’s the waste factor (all those sad lumps of nut solid left behind), and the fact that you’re missing out on all that nutrition and fiber, no matter how much you aspire to use those hard-squeezed lumps for something one day.
