I’ve always loved jerky, even before I was primal/paleo, and even while I was vegetarian/vegan (which never worked out so well). I could probably subsist on jerky alone for weeks at a time — I just love the intensely salty/sweet/umami quality that good jerky has, the way it lasts and lasts as you chew, revealing layers of flavor and texture. When I was little I’d get fresh-made jerky from a butcher in LA when I went out there once a year — huge burnished irregular slabs that I’d ration out gradually, breaking off tiny pieces and savoring them one by one, chewing and chewing until all the flavor was gone. Yeah, I was pretty food-fixated as a kid (not much has changed). But this is all to say that I’m pretty picky about my jerky.  And I love Golden Valley.

This stuff is just straight-ahead fine jerky. No, it’s not hipster jerky in fancy flavors. But it’s made by folks who have been refining the art of perfect jerky for 45 years, raising cows and buffalo humanely on lush green western pastures, curing the meat just right, to create an incredible tender-but-chewy texture and a collection of flavors that’s explosive and tangy-salty-sweet in all the right ways. One of my biggest beefs about jerky is when it’s cardboardy and dry. This stuff is the opposite of that — it’s so moist that you have to eat it within three days of opening the pack, because otherwise it’ll spoil. But if you can make a pack last longer than a day, you’ve got a lot more restraint than I do —this stuff is so compellingly delicious that I’ll usually devour an entire pack a few hours after opening it. Packed with healthy protein and insanely great flavor, jerky is my go-to road trip food, hiking food, post-running food, out-all day-and-won’t-have-time-to-stop-for-lunch food, and even writing-at-my-desk-all-day-and-don’t-feel-like-preparing-meals food. Golden Valley has been my go-to jerky for years, and even though I’ve added other jerky brands to my repertoire (and even make my own sometimes), I always come back to Golden Valley.

Buffalo meat is nutritionally quite impressive. It’s loaded with protein, low in fat, rich in vitamins, minerals, and healthy omega fats. Here are some of the most awesome things about buffalo meat:

  1. It’s high in quality protein, which is used in the human body to build and repair tissues, produce enzymes and hormones, and maintain cell membranes and components of the immune system. Buffalo is a complete protein, containing all the essential amino acids.
  2. Buffalo meat contains omega-3 and omega-6 fatty acids, which are believed to be useful in many functions of the human body including assisting in formation of cell membranes, aiding in the production of hormone-like compounds, and participating in immune and visual processes.
