These came to me one morning when I was CRAVING something fluffy and bread-y but knew that I needed to eat more greens (I'm working on eating more low carb, TONS of greens, and focusing on proteins and fats right now) and that's when these savory pancakes were created.
Personally, I have a very hard time eating enough leafy greens so this is another way I like to hide them into something that seems more texturally appetizing to me.
For this plate of goodness, you'll need:
about 5-6 stalks of chard (stems attached)
1 Tbsp Otto's Cassava Flour
1 pinch Real Salt
Toppings: nuts, seeds, pesto, more veggies, and ghee, would be my top suggestions
In a small food processor, chop the chard until it has the consistency of chopped frozen spinach (completely broken down).
Add in 2 eggs, salt, and flour and blend into a batter.
Pour batter into a well oiled pan over medium heat and cook until firm, then flip to cook the other side until done.
Top with warm ghee, your choice of toppings, and serve.
