Peanut Butter and Jelly Bites!

Posted on February 01, 2014 by Alyssa Cassidy

Okay, maybe not candy. And definitely not actually peanut butter and jelly, but I made this fun little bites last weekend and it took everything in me not to eat them in one go.

These are good to keep on hand for a quick treat that take you back to the PB&J taste that will remind you of childhood. Oh, and they only take 3 minutes to make.

Peanut Butter and Jelly Bites:

You will need:

  • 2 tbsp coconut oil
  • 2 tbsp your favorite nut butter (I recommend Dastony)
  • 1 tsp pure vanilla extract
  • 1/2 cup raisins
  • 1 tbsp honey (for added sweetness, omit to reduce)

Heat the coconut oil on the stove until melted, add in nut butter, vanilla and agave and mix well.

Lay raisins on a silpat or parchment paper and pour the warm mix over. It will spread so I spooned as much of the runny parts back on top of the raisins.

Throw in the freezer for an hour and ta da! Chop or break into pieces and that is IT! I keep mine in the fridge because they will melt easy, that is if they are not gone within the first hour in this household.
