Quick and tasty breakfast (or sweet snack) created from a wonderful EdilbleHarmony.com recipe -Goji Banana Scramble. I added a pinch of Real Salt and instead of raisins and I used Sunfood goji berries. They plumped up so nicely (not to mention they are low in sugar and high in antioxidants as well!)
Only 3 simple steps:
-Add in all ingredients
-Brown, scramble and repeat until it has all browned and cooked a bit
Then, dig in.
This definitely has a bread pudding taste so I consider it a huge win. Give it a try and let me know what you think!
