A recipe from a friend: Chewy Sweet Potato Spice Cookies

One of our awesome Instagram friends, DrMom21, stocked up on our sweet potato flour. Over the last few weeks, I’ve been drooling over her delicious looking pastries using it! She sent me this recipe which I just had to share so more of you could try it!

Chewy Sweet Potato Spice Cookies




Preheat oven to 350.

Cream together: 3/4 cup butter (recipe calls for shortening, I am going to try grassfed butter) 3/4 cup honey

1/2 cup maple sugar (optional) I’m going to add a few tbsp of coconut sugar! 


1 egg

1 cup sweet potato flour

1tsp vanilla

1/2 tsp sea salt

1/2 tsp baking soda

1/2 tsp cinnamon

1/8 tsp ginger

1/8 tsp all spice

1/8 tsp cardamom

Mix well and drop by spoonful onto a prepared cookie sheet. Bake for about 12 minutes. (butter might make them spread quicker, thus bake faster, just watch for color)

She notes that these make awesome thumbprint cookies with some homemade fruit spread. Maybe some chia jam!
