I made these on accident, really (as you can see I didn't even have my camera out to get a real nice photo- but flavor wins over photogenic food, yeah?!) I set out one morning to make this lemon medeira cake by Real Food Outlaws, then halfway through realized I didn't have the ingredients I needed. I adapted the recipe using what I had on hand, and the outcome were these simple, slightly sweet, little muffins, perfect for sharing with your crossfit box on a nice Saturday morning (that's what I did with mine ;) The flavor is subtle, but the consistency and the slightly crisp edges make these a fast favorite.
Preheat oven to 325.
In a large bowl, mix 1/2 cup melted coconut oil, with 4 eggs, a few drops of pure almond (or vanilla) extract, and a few drops of lemon juice.
Mix the 2 together and spoon by the tablespoon into a mini muffin pan. It should fill all the cups with a tiny bit of the thick batter leftover.
Bake for 12-15 minutes until browned and let cool before removing. Enjoy!
