Not going to lie, these little maca filled muffins taste like gooey brownies- except no refined sugar, or fake chocolate here. Instead, carob, similar to cacao without the caffeine. If you don't have carob, you can use cacao, no problem- I use them interchangeably on recipes for similar but slightly different taste.
Yields 8 mini muffins- double the recipe if needed.
To make these, go ahead and preheat your oven to 350.
In a small food processor, or blender, mix:
2 tsp coconut oil melted
Transfer to a medium sized bowl then add:
2 tbsp carob powder or cacao
1 tbsp maca
dash of Real Salt
1 tbsp walnuts or almonds
1 tbsp raw honey
then mix well. Slowly add in 2 tbsp coconut flour and continue mixing until a brownie like batter is reached.
Grease a mini muffin pan and scoop by tablespoon into pan.
Bake for 13 minutes until done and let cool.
