I've had quiteeee the sweet tooth lately, holidays to blame, right? I whipped these little truffles up for a cleaner sweet treat to help me transition away from all the sugar of the holidays and into a lower glycemic being.
I'm absolutely obsessed with goji berries, and Sunfood's are quite the find. They are not bitter like many other brands out there, and are more raisin like and plump than the average dry, hard little bits. You can sub your favorite dried fruits in this and play around with the dry ingredients- some maca for a little energy boost, or some acai powder would taste great in this as well. For this variety, you will need:
Chocolate Goji Berry Truffles
Put your dates or plums into a food processor and blend until they are chopped very small and almost gooey. Add in almonds and blend until chopped small. The mixture should look something like the photo below after this.
Add in goiis, coconut sugar, and cacao and mix well. This part gets messy.
Scoop out by tablespoon into balls of “dough” and roll until compact.
I rolled a few in the extra goji berries (chopped) and some cacao powder.
