4 Ingredient Paleo Gingerbread Cookie Dough Bites

The minute we got our new Collagen Creamers from Vital Proteins in the mail, I could already taste these Paleo Gingerbread Cookie Dough Bites. I had recently created a Snickerdoodle Cookie Dough Bite recipe to share in December, and knew they were the perfect way to make these as well.

What is Collagen Creamer?

At the most simple, it's a delicious, Whole30 Approved coffee creamer that's full of collagen which is touted for it's hair, skin, nails, bones and joints benefits! Add a scoop of this stuff to your coffee, orrrrrr some cookie dough bites, and get creamy, dreamy collagen in three delicious flavors with no sugar added. 

4 Ingredient Gingerbread Cookie Dough Bites

Here's how to make them

Made with just FOUR ingredients, these little fat bombs contain collagen, as well as good fats from ghee, and coconut milk, so they'll fend off your sugar dragon during the holiday season while still letting you enjoy all the delicious flavors. 

You'll need:

 4 Ingredient Gingerbread Cookie Dough Bites

  1. In a high power blender, grind the cashews until it closely resembles fine sand, almost into a paste.  
  2. Add to a medium sized bowl, then mix in honey, melted coconut oil, and 2 scoops collagen. Mix well. 
  3. Scoop out a teaspoon of mixture into your palm and roll into a ball. Roll the ball in the collagen creamer to coat and place on a plate. Repeat until you have a whole lotta gingerbread balls.
  4. Refrigerate when not serving. 
  5. Optional: set aside a few teaspoons of the dough mix. Melt 2-3 ounces of chocolate over the lowest heat on the stovetop. Pour two, 1 tbsp scoops of the melted chocolate into a silicon candy mold (I prefer a square or mini muffin cup.) Freeze until chocolate sets. Add a scoop of the dough atop the frozen chocolate leaving a boarder around the edges, and patting down slightly. Pour remaining melted chocolate over and freeze until set.
