"OHMYGOSH I'M SO EXHAUSTED AND I'M SO HANGRY" - real life inner dialouge, usually on weekends when I'm trying to get a million things done and go to long without a meal or snack. Today I found myself RIGHT there, and needed out of it quickly.
I opened my pantry — 95% of what I had on hand needed cooked in some way to become a meal. So I opted instead for this super simple soup that I whipped up in about 45 seconds with just FIVE ingredients.
The real star here is the Kettle and Fire Chicken Broth that I used as the base for this soup. Typically, with soups, I feel hungry very quickly after. But with real deal broth, you get all kinds of collagen, vitamins, and other amino acids, etc from the bones of the well raised animals that it's more than just a liquid. It's liquid GOLD! Pair that with some good satiating fat from avocado and this is perfect for a small meal or appetizer until you can cook something a little more substantial ;)
1/2 carton Kettle & Fire Chicken Bone broth
1 to 1 1/2 avocado (de-pitted, skin removed)
1 large cucumber (skin on is fine!)
handful fresh cilantro
pinch of Real Salt
Add all of the ingredients into a food processor and blend until creamy. Add salt to taste, garnish with additional cilantro or toppings.
