Paleo BLT Plantain Waffle
It took me years, but I finally caved and bought a waffle maker. I first saw it as something I'd use to make sweet breakfast waffles once in a blue moon, but I was determined to find more delicious ways to use it instead.
First, THIS spiralized veggie waffle is brilliant. Second, I've been straight up cracking eggs in my waffle maker for "waffle eggs." But when I was craving a big chunky sandwich the other night and didn't have time to wait for a loaf of Legit Bread or California Country Gal, we created these.
Dense, chewy, melt in your mouth paleo waffles, completely savory, with our delicious plantain flour. Yep, that's what I created for my "bread." Then I just threw some good bacon, mayo, tomato, and lettuce (avocado if you've got a ripe one) between them and viola!
Here's how to make it
You'll need: (for 4-5 waffles)
6 tbsp plantain flour
dash of salt
2 green onions (optional)
1 tbsp water
Toppings: mayo, bacon, lettuce, avocado, tomato
1. Combine all ingredients in a blender or food processor and blend until combined.
2. Pour 1/4 of mixture into a waffle iron, waffle maker, or pan.
3. Cook until solid, remove carefully and repeat with remaining batter.
4. Assemble sandwich and enjoy.
