Whole30 Creamy Garlic Riced Broccoli
Rice? Not quite. Broccoli rice is my new veggie obsession. I've long loved cauliflower rice but this latest development is just adding to that love. Broccoli rice is another great way to get more vegetables in your day.
I've been seeing it sold on store shelves, but you can easily make it yourself (try this method.) Grab a bag, a few easy ingredients, and make this creamy cheesy (no cheese involved!) garlic dish. This sauce combines yummy butternut squash, good fats, and a little nutritional yeast to give it the most delicious flavor. PLUS, the whole thing is totally Whole30 compliant.
Here's how to make it.
1.5 Cups butternut squash, roasted (peel, toss in oil and salt, then bake until soft.)
a few cups riced broccoli
1/4 Cup coconut milk
2 Tbsp broth
1 Tbsp nutritional yeast
Combine all ingredients besides the broccoli rice in a food processor until sauce forms. Adjust amount of salt and garlic powder to suit your taste.
Heat up olive oil, ghee, or your favorite cooking fat in a skillet over medium heat. Add riced broccoli and cook to soften. Add a sprinkle of salt and garlic.
Plate, the spoon sauce over "rice."
