Chia pudding and chia mousse are a staple in our breakfast recipe rotation. It's filling and healthy and not to mention tasty! And this mint chocolate variation has the perfect flavor combination to satisfy your holiday taste buds

Rest Time: 4 hours to overnight
- 1 cup almond milk
- 1/4 cup Sunfood Organic Chia Seeds
- 1/4 teaspoon mint extract
- 2 tablespoons cacao powder
- 1 1/2 tablespoons maple syrup
- 1/2 Pure Mylk bar chocolate, melted
- Pinch of Redmond Real Salt
- Fresh mint
- Cacao nibs
In a medium bowl, combine all the ingredients. Whisk together until fully blended. Cover tightly in plastic wrap and refrigerate for at least 4 hours or overnight.
Once rested, pour the mixture into a high speed blender and blend on high for 1 minute until smooth. Return to the refrigerator for 30 minutes, then serve in small dessert bowls with fresh mint leaves and a generous sprinkling of cacao nibs.
