Perfect Keto Recipe Guest Post - Chocolate Pancakes with Blueberry Butter 

CHOCOLATE PANCAKES WITH BLUEBERRY BUTTER

Keto is HUGE right now, folks, so it's time for a Perfect Keto Recipe! 

What is keto?

If you're unfamiliar, a ketogenic diet is most simply described by Perfect Keto as "Forcing the body into burning fats instead of carbohydrates. Those who follow it eat a diet that contains high amounts of fat, moderate amounts of protein, and low levels of carbohydrates."

You may notice many people eating low carb, high fat, and different variations within paleo and keto, so it can get tricky, but many have found this way of eating helpful to their longterm health goals. Perfect Keto is a company who makes high quality supplements like MCT oil powder, Exogenous Ketones, and now, Keto Collagen Protein, to assist those following a keto diet. 

This Perfect Keto recipe from the folks at Perfect Keto is a delicious way to indulge while also keeping it keto, low carb, and high fat. It includes their Keto Collagen which combines MCT's for healthy fat energy, and collagen protein for tissue health. 

Ingredients:

  • 4 large pastured eggs
  • 3 tbsp. MCT oil or liquid coconut oil
  • 1 scoop Collagen Protein (add a dusting of cacao to make them chocolate pancakes!)
  • 1/4 scant cup coconut flour
  • 1/2 tsp baking soda
  • Pinch salt
  • 1 tbsp. Kerry Gold butter for cooking (you can also use ghee for this)
  • 2 tbsp. Kerry Gold butter
  • 3 tbsp. frozen wild blueberries
  • Optional: stevia for sweetness

Instructions:

  1. Set a large cast iron skillet to heat on medium heat.
  2. In the meantime whisk the MCT oil and the eggs together. Add in the coconut flour, protein, baking soda and pinch of salt. Mix until smooth. The batter will be thick.
  3. Once the skillet has come to temperature add the tablespoon of butter.  
  4. Pour the batter on to the skillet. Will make 4 2/3 cup pancakes. Cook on medium heat for 4-5 minutes a side.
  5. These bad boys will be tall. After you flip them once, flip them again and gently press down a bit to make sure the middle is fully cooked.  Remove from heat.
  6. In a small sauce pot, add the blueberries, cook until they thaw and the fluid begins to simmer. Add in the butter and mix and mash until the blueberries are completely softened.  
  7. Serve your pancakes and spoon buttery blueberry mix all over them. Enjoy!
