These little treats came to me on a gorgeous fall afternoon here in Austin. I was out in the sun (still 90+ degrees,) and dreaming of fall. My favorite bloggers had delicious looking seasonal recipes left and right, the grocery stores had all their seasonal items in place on the shelves, and I had a serious longing for real fall weather and cookie season.
Since it was still SO warm outside, I whipped these little cookie dough bites up to satisfy my need for something "seasonal" while still temperature appropriate (no baking required = a much cooler house!)
2 cups raw organic cashews
2 teaspoon cinnamon
1 Tbsp maple syrup
1 Tbsp ghee
drizzle of vanilla extract or pinch of pure vanilla
coconut flour and more cinnamon to coat
