Whole30 Sweet and Savory Chicken
I love a good sweet and savory chicken recipe, but it's not quite what one would call a Whole30 friendly food. I've been so inspired by I Heart Umami's recipes lately that I was inspired by her use of ingredients to come up with my own Asian inspired chicken marinade. This has turned into a favorite around here.
I make a big batch at the beginning of the week (think 2 lbs chicken thighs) and have it for several meals, topping salads, eating on spaghetti squash, in lettuce wraps, or to dip in your favorite Whole30 nut butter (yum!) I think you're going to want this one in your Whole 30 recipes collection as well.
Heres how to make it
2 lbs chicken thighs, diced into bite size pieces
1/2 Cup coconut aminos
1 Tbsp vinegar
2 tsp fish sauce
2-3 tsp lime juice
1 1/2 tsp ground ginger powder
3 cloves garlic, minced fine
generous sprinkle or salt
optional: 1 tsp chili paste
1. Combine all ingredients in a large container, add chicken, and marinate for 8-12 hours. (I like to get it soaking before work, so it's ready to cook when I get home!)
2. Add your favorite cooking fat to a skillet, bring to medium high heat, then add chicken and any remaining marinade.
3. Simmer until most of the sauce has cooked, and chicken begins to brown. You can add another dash of aminos or ginger here to amp up the flavor.
4. Remove from heat and serve.
