Whole30 Apple Pecan Sweet Potato Toast
This little meal really couldn't be more simple or satisfying. The combination of apple and pecan are as classic to me as PB&J, tomato and grilled cheese, salt and pepper — you get the idea. The star of this dish is the jar of our Georgia Grinders Pecan Butter that I was determined to do something with it other than shove it straight into my mouth with my spoon.
Sweet potato toast was a no-brainer - it's a fun and delicious way to keep things Whole30 when bread is off limits. Just 15-20 minutes is all you need to make this easy Whole30 recipe from start to finish.
Here's how to make it
1 large sweet potato or yam for sweet potato toast
1 large apple (i prefer some variety of red apple here)
1 lb chicken thighs or breast

Preheat oven to 400.
Slice potato into thin, long slices and place on a baking sheet, greased enough to prevent sticking.
Bake for about 10-15 minutes until soft enough to eat, but not flimsy.
Meanwhile, bring a skillet to medium-high heat, add your favorite cooking fat, then cook the thighs with salt and pepper until cooked through. Let cool slightly, then slice into strips.
Slice the apple while potato finishes cooking.
When potato slices are finished cooking, let slightly cool, top with a teaspoon or so of the pecan butter, then alternate the apple and chicken atop the pecan butter.
