This round of Whole30 has been filled with flavor. Thanks to little toppings and condiments like this, I've been happily eating the most delicious Whole30 friendly meals.
This Greek Veggie Topping is awesome for topping chicken, sweet potato toast, or adding to your salad. It tastes like taking a big bite out of a fresh veggie pizza, sans cheese and crust of course ;). It takes about 5 minutes to whip up and stores well for a week or so in a mason jar in your fridge.
1 can artichoke hearts
1/2 of an 8 oz jar of roasted red peppers or homemade roasted peppers
1 bag of GAEA olives (flavor of choice)
Primal Kitchen Greek Vinaigrette to coat
Drain liquid from hearts, peppers, roughly chop each into 1/2-1 inch pieces and add to a large bowl. Add a pack of GAEA olives, then pour Greek dressing over the mixture to coat. Mix well and serve.
