Why Hazelnut Alfajores are so good and Paleo-friendly

What went into making these little luxuries? Barbarella Paleo created these Paleo Alfajores made with almonds and tapioca flour. Each is filled with a delicate layer of Hazelnut and dark chocolate spread. They are dairy free, gluten free and refined sugar free.

These sweet rounds even contain fats good for your health as the bonus "frosting" on this cake. Barbarella is Barbara Perez. Her story is one that we all relate to: the search for health in a convenience-driven world, often with health issues to troubleshoot. Here's what she says,

"My name is Barbara Perez, I was born in Venezuela, I am a cook, nutritional coach and a dentist. I have Italian roots from my maternal grandparents, whom have taught me the love for cooking and good food. I used to hide under the table when my Nonna made potato gnocchi and I ate them raw when I was a little girl. I owe everything I know in the kitchen to her a to my mom, both Italian.

I am not 100% Organic, but I support natural cuisine made "from scratch", I avoid anything containing preservatives and coloring following the "back to the kitchen of our ancestors" philosophy. I believe the nutritional regimens must be established according to biotype and metabolism of each individual.

This concept of healthy cooking took more importance in our lives about 8 years ago when my husband developed a type of allergy to "starches", that caused him lower back pain when sleeping. After visiting many doctors and doing a lot of research, we found out that fully removing starches from his diet would make the pain go away.
My passion for culinary arts was not enough so I had to develop a lot of creativity and testing since most of the meals we know in the modern kitchen have "starch".

Fortunately for us, we heard about a diet named "Paleolithic Diet", which is based on protein consumption (Animal and Plants) and the avoidance of Carbohydrate and refines sugars. This Paleolithic cuisine gave me an extensive menu of recipes using almond, coconut, quinoa, amaranth, among many other flours; We soon found out that this type of cuisine not only helped my husband condition but also prevented getting diseases as arthritis, arteriosclerosis, diabetes, obesity among many others."
