Phat Fudge Performance Food Packet by Phat Fuge

Athletes (especially runners) consume these things we call "goo". They're more or less jelly in a little squeezy packet. They make our legs go...for a while. But they are sugary and so much not in the Paleo-friendly world. What's a person to do? Simple: EAT FUDGE. That's right. Phat Fudge, from the Paleo Chef Mary, is everything that a performance food should be: organic, delicious, energy-legs-making. On top of all of that, go one better: it is portable chocolate. Chocolate that doesn't worry about melting. Chocolate that doesn't care about your "goo", only about your health. That's what I'm talking about. ~

For the true, true stories behind this incredible foodstuff, read on.

Performance food is about as delicious as the name sounds. Things like energy bars and "goo" are made with lots of science and not a lot of foodie care. They work, sure, but only for awhile until your tastebuds rebel and your gut says, no more.

But what if a performance fuel could actually be based on real ingredients, organic and nutritious? What if it gave you slow and sustained energy through a mouthful of decadent fudge? That's Phat Fudge. Created first as nearly an accident, Mary the Paleo Chef came up with this recipe when trying to save a cook-up gone bad, and what you will soon hold in your hands is the wonderful result.

Just tear it open and bite, taste, smile. Fudge is on the way to your happy brain.

Why Phat Fudge is so good for you (because hey, after all, it is still called "fudge")

Simple magical and all organic is what this fudge is all about. Here's what's going on inside, for starters:

Organic Grass-Fed Butter

Nutrition? Yep. Tonalin CLA: Short for Conjugated Linoleic Acid, this fatty acid packs a punch, crucial in maintaining a healthy metabolism and weight management. We are often asked “how do vegetarians get their Tonalin CLA if they don’t eat meat?” Grass-fed butter. That’s how.

1:1 Omega Fatty Acid Ratio: Because this is an animal source of fat, there is no Omega 6 present in this butter. This is huge in making it possible to consume significant amounts of the delicious butter without all the health risks associated with other oils like Corn and Vegetable Oil.

Organic Tahini

Sesame seeds have been used for thousands of years for culinary and health-enhancing purposes. Their nutritional profile is a powerful one. They’re a great source of dietary protein, healthy fats, fiber, antioxidants, vitamins and minerals.

Organic Cacao

Cacao is one of the most powerful known superfoods, and had been used for thousands of years to boost health and energy levels. Cacao is one of the most phytochemically complex foods on Earth. Here are just a few compounds found in cacao beans: neurotransmitter anandamide (the "bliss" chemical), neurotransmitter phenethylamine (also known as PEA, the "love molecule"), neurotransmitter serotonin (a brain chemical that acts to shield against stress, increasing ones sense of wellbeing) neurotransmitter dopamine (increases ones sense of pleasure and elevates the mood), phytochemical coumarin (suppresses appetite, and also has anti-tumor properties and helps with blood circulation) enzyme asparaginase (a special enzyme with anti-cancer properties) ergosterol (a necessary chemical for Vitamin D assimilation), sitosterol (helps maintain healthy cholesterol levels), and magnesium (helps combat osteoporosis and weak bones/teeth, heart disease, migraines, muscle spasms, painful menstrual periods, and even diabetes.)

The awesome woman behind this magical product: Mary, The Paleo Chef

Before there was Phat Fudge, there was Unicorn Fuel. Here's Mary's run-down of how that all happened:

"Unicorn Fuel is what began as a coffee drink-drank that I made for clients a couple of years ago, morphed from the very popular butter coffee. Soon after, I started to get requests about a portable form for when they were traveling or out on the field or in the studio or on set or [insert their unique profession here]. Boss clients, obvi.

It had been on my mind for a couple of years at this point, not Unicorn Fuel/Phat Fudge specifically, but that I needed to create a portable and easily digested food, for myself and for my athlete clients, that wasn't filled with unnecessary crappy ingredients.

Making Halva one night, I poorly timed the melting of the honey so I wasn't going to get the crystallization that I needed, so in attempt to save the ingredients, I tossed in all the Unicorn Fuel ingredients for shits. The next morning, upon first bite, I was like, this is delicious. THEN, I was like HOLY CRAP, THIS IS THE FUEL! THIS IS SPARTA!

From there, I adjusted the ingredients to come up with the right combo/nutritional value I wanted per cube, they started as homemade cubes for clients. Clients LOVED it. I posted the recipe. It went viral. You asked me (even though my first basic recipe is still live) to turn it into a product. I, obediently, started hand packing. A couple of trollops tried to copy cat me. You guys shut them down. I did this epic pre-order so I could scale production. And here we are, just at the beginning."
