Before there was Phat Fudge, there was Unicorn Fuel. Here's Mary's run-down of how that all happened:
"Unicorn Fuel is what began as a coffee drink-drank that I made for clients a couple of years ago, morphed from the very popular butter coffee. Soon after, I started to get requests about a portable form for when they were traveling or out on the field or in the studio or on set or [insert their unique profession here]. Boss clients, obvi.
It had been on my mind for a couple of years at this point, not Unicorn Fuel/Phat Fudge specifically, but that I needed to create a portable and easily digested food, for myself and for my athlete clients, that wasn't filled with unnecessary crappy ingredients.
Making Halva one night, I poorly timed the melting of the honey so I wasn't going to get the crystallization that I needed, so in attempt to save the ingredients, I tossed in all the Unicorn Fuel ingredients for shits. The next morning, upon first bite, I was like, this is delicious. THEN, I was like HOLY CRAP, THIS IS THE FUEL! THIS IS SPARTA!
From there, I adjusted the ingredients to come up with the right combo/nutritional value I wanted per cube, they started as homemade cubes for clients. Clients LOVED it. I posted the recipe. It went viral. You asked me (even though my first basic recipe is still live) to turn it into a product. I, obediently, started hand packing. A couple of trollops tried to copy cat me. You guys shut them down. I did this epic pre-order so I could scale production. And here we are, just at the beginning."
