As we became more of a consumer culture, coconut was revered for its stability as a natural fat, used in cooking and frying, not to mention continued consumption of raw coconuts. But times changed, and coconut became a forbidden food, full of something truly evil called “saturated fat.” Many people stopped eating it except on rare blissful occasions. A friend says, "Then, about 15 years ago, when I was a raw vegan, I came across some studies that touted coconut as actually healthy. I kept reading. And I started eating coconut again, with abandon, in all of its forms — from chips to oil to butter. I’ve never looked back."

Dang is named after my mother, who grew up eating food from some of the best chefs in the world: Bangkok’s street vendors. One day, she passed on her recipe for Thai Lettuce Wraps just like she used to have as a college student. I found myself involuntarily snacking on one of the ingredients - Toasted Coconut. It had a strong, sweet aroma and a very satisfying crunch. I immediately called my family, who have been importing goods to the US for more than 30 years, and with that, our company was born.
