I adore macaroons, oh my gosh I do. I’ve always loved macaroons, and I’ll probably always love them. Yeah, I know that’s not a very paleo or even primal thing to say, but I grew up in a standard American household eating a standard American diet where sweet treats were put on a pedestal. Infrequently offered, constantly craved. But the sweets we had were not very good in terms of health and nutrition. It’s too bad there were no Rickaroons then!
Even in our modern and pretty informed lives, we still crave treats. This is Grant’s story about his dad and the start of Rickaroons:
“It started with love - the love for a woman and the love of a healthy life.
I was just a kid when my dad, Rick, created the first version of Rickaroons. He made them to comfort and support the woman he loved and cared for during her battle with Multiple Sclerosis. Although I was young, I still realized that Rickaroons represented his love for a strong woman and a healthy lifestyle.
Over the years my dad then crafted his nutrient-dense dessert into the perfect fuel.
The final product is what we now call the Rickaroon. It is the all-of-the-above cookie: gluten free, vegan, organic, Paleo, soy free, and most importantly - tastes like heaven. The coconut and almond butter not only taste great together, but yield a nice, slow-burning fuel for your body. We eat them in the Rickaroons office first thing in the morning before a swim, as a mid-day snack to stay energized, and as a reward for a good, hard day's work.”

Grant is married to his best friend Claire, a woman given life by Zeus who runs our favorite San Diego non-profit STAR/PAL. They live in San Diego with their two Baja rescue pups and between the two, can recommend a book and podcast to anyone.
