There's a lot of reasons to ditch the soy sauce and move on to something more . . . evolved. The first few reasons are more about the soy sauce itself: it ain't what it used to be. Old school soy sauce was fermented, slowly, out of locally-grown soybeans (as there really weren't any other kind). It was pretty good stuff. But these days, soy sauce is a highly processed food, much to our disappointment. The soybeans are almost certainly a GMO crop, for starters. Then there's gluten from wheat, and a whole bunch of factory processing of the brown salty liquid to make it shelf-stable and perfectly the same from batch to batch.
