Paleo Hazelnut Alfajores, 4 Pack by Barbarella Paleo

Delicate. Buttery. Melt-in-your-mouth. Decadent. Remember fondly those cookie days of the past when you take a nibble of a Paleo Hazelnut Alfajores. Bring back those happy thoughts running through your head the first time you had your first buttery shortbread cookie. Perhaps it was one of those expensive sandwich wafers in the 90s-era gourmet paper sack from the "farm" (you know which one I mean). Or maybe it was a homemade cookie, awesome but made with tons of flour and who-knows-what-kind of shortening. Now, take another bite, letting the cookie melt against your tongue and the hazelnut filling slowly find your taste buds. Now that's a luxury.  ~

For the true, true stories behind this incredible foodstuff, read on.

It's a paleo-friendly cookie. If those two words ought not be in the same sentence, then this probably isn't your gig. That's cool! Because there are tons of other amazing things here to be found like meat bars and collagen powder and so forth.

Now, for those cookie fans: you still here? Great. Let's talk South American shortbread. So you take a decadent little circle of a rich cookie, made tender with lots of great fats like coconut oil and egg yolks. Take two of those cookies and smoosh a little hazelnut spread in the middle to make a delectable sandwich. Roll the outside in coconut and you're done. Each one a little full moon of happy for your tongue, each one a miniature vacation to cookie bliss.

Why Hazelnut Alfajores are so good and Paleo-friendly

What went into making these little luxuries? Barbarella Paleo created these Paleo Alfajores made with almonds and tapioca flour. Each is filled with a delicate layer of Hazelnut and dark chocolate spread. They are dairy free, gluten free and refined sugar free.

These sweet rounds even contain fats good for your health as the bonus "frosting" on this cake. The fats start with coconut oil, which can improve cardiac health, stimulate the thyroid function and metabolism. What can't coconut oil do? And don't forget the eggs! My favorite part of these treats is that they do not go completely over the top and insist on being vegan on top of using simple and real ingredients. I find that the egg yolks included add the right amount of buttery richness without dairy or any need for stabilizers or emulsifiers. Eggs to me seem like almost the most paleo food out there.

Here are some of the amazing ingredients in Hazelnut Alfajores

Coconut Oil

Coconut oil has been used by many cultures worldwide for thousands of years, and is well known for its many amazing properties. Coconut is so nutritious, its list of benefits reads like a patent medicine bottle. Many people eat several tablespoons of coconut oil daily, for the incredible host of benefits it confers. It’s full of health-boosting lauric acid and medium-chain triglycerides.

The saturated fats in these cookies are mostly the medium-chain saturated fats from coconut and palm oils, like caprylic acid (C8), capric acid (C10), and lauric acid (C12). Recent research shows that these saturated fats have unique health benefits. Also, the once-firm belief that saturated fats cause heart disease is crumbling. A substantial and growing body of scientific evidence shows that saturated fats do not cause heart disease.

Almond Flour

Almonds are naturally delicious and extremely nourishing. Healthy fats, fiber, antioxidants, calcium, zinc, selenium, copper, magnesium, manganese, tryptophan and vitamin E are just a handful of the key nutrients that make almonds so nutritious. Almonds are so nutritious — their list of benefits reads like a patent medicine bottle. They’re full of health-giving fats, like oleic acid and linoleic acid, powerful antioxidants that can protect against many forms of cancer (oleic acid can protect women against breast cancer specifically), and can also significantly lower the amount of LDL in your blood, and reduce your risk for heart disease. Almonds can effectively improve your complexion, slow down your aging process, help improve your blood profile by reducing your LDL, build a strong immune system, prevent the onset of high blood pressure and protect you from other diseases like ADHD, asthma and osteoporosis.

About Barbarella Paleo, in her own words

Barbarella is Barbara Perez. Her story is one that we all relate to: the search for health in a convenience-driven world, often with health issues to troubleshoot. Here's what she says,

"My name is Barbara Perez, I was born in Venezuela, I am a cook, nutritional coach and a dentist. I have Italian roots from my maternal grandparents, whom have taught me the love for cooking and good food. I used to hide under the table when my Nonna made potato gnocchi and I ate them raw when I was a little girl. I owe everything I know in the kitchen to her a to my mom, both Italian.

I am not 100% Organic, but I support natural cuisine made "from scratch", I avoid anything containing preservatives and coloring following the "back to the kitchen of our ancestors" philosophy. I believe the nutritional regimens must be established according to biotype and metabolism of each individual.

This concept of healthy cooking took more importance in our lives about 8 years ago when my husband developed a type of allergy to "starches", that caused him lower back pain when sleeping. After visiting many doctors and doing a lot of research, we found out that fully removing starches from his diet would make the pain go away.
My passion for culinary arts was not enough so I had to develop a lot of creativity and testing since most of the meals we know in the modern kitchen have "starch".

Fortunately for us, we heard about a diet named "Paleolithic Diet", which is based on protein consumption (Animal and Plants) and the avoidance of Carbohydrate and refines sugars. This Paleolithic cuisine gave me an extensive menu of recipes using almond, coconut, quinoa, amaranth, among many other flours; We soon found out that this type of cuisine not only helped my husband condition but also prevented getting diseases as arthritis, arteriosclerosis, diabetes, obesity among many others."

Here are answers to some of your most important questions!

Is a paleo cookie really such a good thing?

Beauty is in the eye of the beholder; when you are beholden to having something a little sweet and decadent without reaching for conventional flours, this cookie is the perfect thing to hold in your hand and nosh with your mouth.

Are all of the ingredients organic?

Barbarella Paleo is not 100% organic, but every opportunity is taken to expand the organic certification of the ingredients list. Barbara believes in food from scratch, with real ingredients and a good dollop of love. That's what you'll find here.
