Honestly, I can live without bread. Pizza's good but that can be "hacked" with gluten-free options. Pasta? Over it. But sometimes, just once in a while, I get that Sunday brunch kind of feeling and I just. gotta. have. PANCAKES. For those times, I have a solution: Simple Mills' Pancake & Waffle mix. No gathering of dry ingredients, only eggs, milk, and oil and this lovely box. Stir together, slide onto the griddle with grass-fed butter, and go to town. Maple syrup, anyone?
Oh my gosh: pancakes. Brunch of the gods, really. There are fluffy pancakes, there are sweet pancakes, there are pancakes drenched in salty butter and a touch of honey or maple syrup. All of them are good, but many of them are gluteny. That's no good! So you can find a laborious recipe online, or you can just pop open this box, add eggs and milk and oil and get rocking in just a few minutes. I'm already thinking about my big cast iron skillet getting warm and then sliding in some ghee to melt while the batter gets poured right in, bubbling all the way. The grass-fed butter is ready and waiting, and the maple syrup (or not!) is standing by for duty.
And while we're talking about it, waffles! Same thing as with pancakes, only crisper. You mix up some batter, grease up your waffle iron, and get to making those intricately crevassed edibles.
Why spend all the shopping time and measuring minutes to put together your own dry mix? That seems silly when this magical box is just waiting for you. Arrowroot keeps the cakes light and airy, and both almond and coconut flour are adding some heartiness and nutrition all around. I'm pretty stoked to have brunch options that go beyond the typical eggs and hash browns, aren't you?
Basically, it's the ingredients. Well-sourced, sustainable, nutritious. Simple Mills' recipes take those raw materials and put them together, to let YOU transform them into perfection.
Simple Mills' almonds are blanched - that is, soaked to remove the skins – this removes all the anti-nutrients so that your body can absorb all of the wonderful vitamins and minerals and make it easier for you to digest.
With 6 grams of protein per ounce, a low glycemic index and the 12 vitamins and minerals they contain, Almonds are one of the most nutrient-rich nuts on the planet. Almonds are a good source of Vitamin E (great for healthy skin and eyes), magnesium (helps digestive health), protein (keeps you fuller longer), and potassium (essential for maintaining normal blood pressure). What's not to love about that?
Long used as an addition to cookies and pastries for the lightness it impart, this flour has qualities that make this pancake mix turn out some seriously delectable fluffy cakes. It also boasts zero gluten (of course) and respectable amounts of both calcium and manganese. This is the flour added to this mix that allows for super-soft and tender breakfast cakes, no heaviness like other gluten-free alternatives!
Coconut has been used by many cultures worldwide for thousands of years, and is well known for its many amazing properties. Coconut is so nutritious, its list of benefits reads like a patent medicine bottle. Many people eat several tablespoons of coconut oil daily, for the incredible host of benefits it confers. It’s full of health-boosting lauric acid and medium-chain triglycerides, and it’s been shown to:
At the most simplest, just follow the recipe and have some breakfast nirvana. Eat with abandon. Top with stuff.

"Simple Mills began out of a necessity and a desire for a food that is simple, healthy, and delicious.
In her very own living room in North Carolina, Katlin made the very first Simple Mills muffin mixes one-by-one, using intentional ingredients that made her feel great.
Now based in Chicago, Simple Mills continues the tradition of baking with love. The brick walls, big windows and mini kitchen of our little office are still where our baking innovations come from.
Occasionally, however, we’ll stop to laugh at the weird stuff, get excited about accomplishments big and small, or break out the kombucha and have a dance party."
