My mom is linked in my head with Andes peppermints—those little rectangular foil-wrapped wafers of pale brown and neon green minty middle. You can't go wrong by giving her a box as a gift, then and now. But I've made inroads; the chocolate my mom eats is of higher octane and better pedigree. That's why this brand new superfood bar is perfect for her and anyone with that mint/chocolate happy button. Real mint extract and chunky cacao bits are mixed in with the dates and cocoa powder base in this Mint Chocolate RXBAR. It's all that a chocolate mint fan needs, whether you're a "Yorkie" or an "Andes". ~

It's a crabby day in the office (or Whole30 month!) when someone tears away my peppermint patties or my junior mints when I'm feeling that sweet minty desire creep up in the mid-afternoon. And yet, I can be won over by something better. First it was those honey mint patties, and now these amazing new bars from RxBar: Mint Chocolate. They have all the same wonderful toothsomeness and chew as all the other RXBARs.
RXBAR is the go-to name for having a bar option that's not too sweet and has the staying power of extra protein from eggs. RXBAR started making bars for those of us ready to "graduate" from the tried-and-true date/nut bars. Those date bars are still delicious, make no mistake, but they can be very sweet and never did have much in the way of protein. As for the rest of the field, other "healthy" protein bars love to add things like rice or hemp or soy protein or "natural" sweeteners just to bind everything together, ingredients that might not be aligned with our nutritional goals. RxBar meets everyone half-way perfectly: start with dried fruit and nuts, add a few spices, add some egg white protein, and . . . that's it.
This latest and greatest flavor invention by the "kids" at RXBAR is nothing new to the flavor junkies out in the world, or those that align with my mom's Andes habit. The formula is this: take something awesome (chocolate), make it with good ingredients (non-GMO), then add MINT. So while the combination is no surprise to candy lovers, the bar is a great addition to the lineup and welcomed by a lot of RXBAR fans. Like all of the rest of the RXBAR flavors, this is a satisfying hunk of a meal or snack, from first to last bite. It won't leave your teeth aching nor your jaw unexercised (that's a good thing!).
RXBAR was conceived by two friends who wanted a better protein bar option. Here's what they say about why it all began, "RXBAR was the first real food fruit and nut protein bar on the scene. Friends since grade school Peter and Jared were inspired by the lack of a REAL FOOD protein bar. All of their favorite snack bars either lacked protein or were chock full of artificial preservatives and ingredients. They headed into the kitchen, got cooking, and RXBAR was born."
Why RXBAR is so good for you
Peter and Jared promise that their bars will never contain these ingredients: Dairy, Soy, Gluten, Added sugars, Artificial sweeteners, Whey, Artificial ingredients, Sugar alcohols, GMOs, or Preservatives. Need they say more?
Here are some of the amazing ingredients in RXBARs:
Dates are the main source of sweetness in these bars, and a natural preservative and source of awesome chewiness. Dates are vitamin and mineral-rich — they’re particularly high in iron and vitamin K.
Egg whites are one of the best sources of protein. Unlike more conventional sources, egg white protein is immediately absorbed into the body due to the naturally high biological availability. In addition to the high-quality protein content, egg whites are jam-packed with minerals and amino acids essential to keeping your body healthy.
Almonds are naturally delicious and extremely nourishing. Healthy fats, fiber, antioxidants, calcium, zinc, selenium, copper, magnesium, manganese, tryptophan and vitamin E are just a handful of the key nutrients that make almonds so nutritious. Almonds are so nutritious — their list of benefits reads like a patent medicine bottle. They’re full of health-giving fats, like oleic acid and linoleic acid, powerful antioxidants that can protect against many forms of cancer (oleic acid can protect women against breast cancer specifically), and can also significantly lower the amount of LDL in your blood, and reduce your risk for heart disease. A wonderful natural sweetness and impressive variety of nutrients makes almonds one of nature’s most perfect foods.
Cashews have a rich supply of oleic acid, a classically beautifying oil, great for skin and hair. It also reduces your blood triglyceride and low-density lipoproteins (LDL), and elevates your high-density lipoprotein (HDL) concentration. Cashews are also rich in linolenic acid, which can effectively lower your blood pressure, and also has antioxidant properties which defend your blood vessels from free radicals. Cashew nuts are very rich source of essential minerals, especially manganese, potassium, copper, iron, magnesium, zinc and selenium.
